About Us
Our start in making cheese is simple. Boredom.
At the beginning of the COVID-19 pandemic in 2020, almost all activities were shut down. This led us to do a lot of reading and watching TV shows. One of these caught our attention about a home-based artisan cheese maker in England. How ironic. That's where we were born.
Our first attempt was mozzarella which tasted surprisingly good. Our second attempt was a basic cheddar which tasted even better, and even more of a surprise.
After moving to East Tennessee, we began to source ingredients from local sources, bringing unique flavors to the foothills of the Smoky Mountains.
And there ya go. Simple.

Our Cheese
We love making beautiful plain cheddars but we really enjoy experimenting with unusual combinations and flavors.

White Cheddar
Cheddar cheese originates from the village of Cheddar in Somerset, southwest England. Cheddar Gorge on the edge of the village contains a number of caves, which provided the ideal humidity and steady temperature for maturing the cheese.
This is a basic cheddar. Although simple to make, it's simplicity highlights the complex taste of cheddar, especially when aged.

Taco Cheddar
This handmade seasoning is sourced from a small family business in New Mexico. The ingredients are ground and mixed by hand.
This is one of our favorite cheeses to make. And yes, that is taco seasoning. This is a full, rich flavored cheddar that is both surprising and full of depth.

Smoked Cheddar with Bacon
The bacon pieces must be dried before milling in with the curds. Freshly cooked bacon contains too much moisture and will cause the cheese to fail while in the aging process.
The rich smoked flavor enhances the taste of the fresh bacon pieces.

Cranberry & Walnut Cheddar
This has a nice nutty taste with the sweetness of the cranberries as an afterthought. The Orange Wheat IPA compliments the cranberries.
